4/1/08 Monokuro Boo bento lunch



Today's lunch...sweet & sour chicken, zukes, and sushi rice
Snack box...mini banana muffin, cream cheese in the container, cheese, grapes, strawberries, blueberries, mini cookies, and of course marshmallow treats on the octopus skewer.

Can you give out the recipe for that Sweet and Sour Chicken? I looks wonderful.

Thanks! It is really easy...I cut up boneless chicken breasts and cook them in the wok. Once they are fairly cooked through, I add in sweet & sour sauce - this is the lazy part, because I use the bottled version - not homemade. I let that simmer until the sauce thickens. Then I add in chopped veggies - peppers, snow peas, or anything else I need to move out of the veggie drawer. I cook until veggies are just tender. I try not to overcook, but sometimes it happens. Best to remember that the heat from the chicken and sauce will continue to cook the veggies after you them off the burner. Just before I take it all off the stove, I add in pinapple and cook until it warms through - this usually happens very quickly. Voila! Simple sweet & sour chicken - little bit healthier than the take out fried version! :~)
